Here's a product review:
YakTrax are AMAZING! Some of the streets I run on are glare ice right now and I experienced 0% slippage to the grippy coils in this babies. I definitely recommend them to anyone who lives in northern regions where ice is present over half of the year!
While I'm at it, here's another product review. My husband is absolutely amazing and knew the perfect gift to get his wife:
A TREADMILL! He even tried to surprise me, but I do have a solid reputation of being impossible to surprise. And, one more brag on Leo, he let me keep my treadmill in the corner of his "Man Cave"! What a great guy.
This morning was a balmy -34°F and I was happily running along in a tank top and shorts. I'm ridiculously excited :) When the weather is perhaps a +20°F, I will venture outside to use my YakTrax again.

I'm attempting to make this corner my "home gym" - notice my yoga mat, foam roller, and 10-lb. dumbbells in the corner. It's a start, anyways :) |
|
Race number decor - I save all of my marathon numbers, minus the far left number. "47" was the first actual race I ever ran in 2009 - how nostalgic! I need to run about a million more marathons to fill up that wall. |

Mr. E is obsessed with the treadmill. |

Leo was ecstatic to win the "Husband of the Year" award for 2013 ;) |
Why It's Good I Love To Run...
Because I love carbs and could live off lefse. That's a slight exaggeration because I would definitely end up with malnutrition! My mom and I made lefse for the first time together this Christmas and it was a blast. Here's the recipe and a few action shots:
Lefse
- 8 cups riced cooked potatoes
- 1/2 cup butter
- 1/2 cup cream
- 1 Tablespoon sugar
- 1 teaspoon salt
- 1 cup flour (less flour the better)
|
My mom's wonderful job of peeling and boiling the potatoes! |
|
Ricing the potatoes |
|
Add the remaining ingredients to the riced potatoes and mix. |
|
Rolling out the lefse mix with the textured rolling pin |
|
Cooking 'em up! |
|
Cooling the lefse |
|
And the best part: Inhaling it! I think my sis-in-law enjoyed it :) Add butter and sugar, unless they're fresh off the grill. Fresh lefse is delicious plain! |
Do you have any random product reviews to report today?
How much do you love lefse?!
Haha I love love LOOOOVE lefse! I can testify that she knows what she's talking about because I've never had it before! I don't even want to know how much lefse I ate, it's addicting! :)
ReplyDeleteAlso congrats on the treadmill! We get ours Monday & I'm excited to train for the half-marathon with you!
GOOD! You are officially an Erickson if you love lefse ;) I ate more lefse than should be legal, that's all I know. Thank God we don't make that stuff year 'round!
DeleteI am BEYOND pumped to run a half marathon with you!!!
LOVE LOVE LOVE YOU!!
DeleteI've never heard of lefse, but it looks SO good! My husband LOVES potatoes, so I'll have to make these...maybe this weekend!

That's awesome - he would probably like potato pancakes, too (another one of my carb-y favorites)! Enjoy the lefse and your weekend!
DeletePatagonia synchilla booties. Yes, pricey ($29), but they are amazing for toddling and running babies. Susanna lives in them and we adore them in all ways!
ReplyDeleteBlack and Decker hand saws. We've been clearing a 30 foot section of land in the PNW coast rain (more intense than normal) this week, and I love those saws! I don't feel safe chain sawing in rain, but sawing for hours= great cross training tools!
Marmot Precip jacket and pants. Just yesterday while sawing, I thanked my 23 year old self's wisdom for purchasing them with my income tax return money. Coming on 13 years later, they are still in superb condition and I love them!
My husband and daughter (though I'm not sure they're "products"). They've let me tackle some major projects this week and I'm beyond grateful to and for them. (After a mini Mommy meltdown of no time alone due to a toddler who refused to sleep unless she was snug tightly on me, I was able to saw and clear for 2 hours yesterday before painting half of our room! See ya crazy blue-green and welcome to heaven...aka Behr Ultra's Classic Silver!)
I may have to look into those Patagonia booties! I have the hardest time finding boots I can actually get on E's feet... Little sandals work fine, but he needs something more covering in the cooler seasons.
DeleteA hand saw sounds like something I could use! My husband and my dad don't trust me with the chainsaw (in any weather)... I just don't get it ;)
You and your family are really nailing your home projects! Nice work!
What an awesome gift! I also ruin all of my husband's surprises, unintentionally! I recently started a "Shaping Up For Summer" link-up, which will run every Saturday through May, and I would LOVE it if you wanted to link up your fitness posts. Hope to see you there!
